Guest guest Posted September 7, 2011 Report Share Posted September 7, 2011 Sesamin (in sesame seed oil)appears to be responsible for inhibition of the delta 5 desaturase enzyme and a resultant rise in DGLA and fall in AA.So it would seem beneficial to add this to our diet as Dr. Barry Sears suggests in his book Toxic Fat.Higher levels of insulin increase the activity of this enzyme.Epa and glucagon inhibit . Also see previous posts on sesame seed oil as a VEGF inhibitor.
