Here's a great receipe for Pumpkin Date Nute Bread 4 beaten eggs 1 cup molasses 1/2 raw sugar 1 16oz can of pumpkin 1 cup of oil 1/3 water or apple juice 1/2 tsp vanilla or a bit more to your taste 3 1/2 cups all purpose (organic) flour 1 tsp baking soda 1 1/2 tsp cinnamon 1 tsp salt or less 1 8 oz pkg of dates chopped in half 1 cup walnuts chopped in food processor or blender Preheat oven 350 Grease bread pans, and lightly flour. Recommended for 3 bread pans. I used 2 bread pans and a cake pan. Beat the eggs, sugars blend well, then pumpkin, oil, juice, vanilla together. Now take the flour, baking soda, cinnamon, and salt, and blend very well. Then the dates and walnuts. Beat well all ingredients together. Pour mixture into pans only half way.
