Pumpkin seeds are a good source of alpha-linolenic acid (ALA), a healthy fat that reduces inflammation, improves blood vessel health, and has beneficial effects on blood fats. For extra flavor, before roasting toss the seeds with a tiny bit of olive oil and a few spices, such as garlic, cayenne pepper, or lemon pepper. Alpha-linolenic acid is a precursor of omega-3 fatty acids, and linoleic acid is a precursor of omega-6 fatty acids. Modern diets tend to be very high in omega-6 fatty acids but low in omega-3 fatty acids. This imbalance may contribute to inflammation, blood vessel dysfunction, increased blood clotting, and unfavorable blood lipid profiles, all of which contribute to cardiovascular disease and increased risk of life-threatening heart attacks and strokes. Increase your intake of omega-3s by adding alpha-linolenic acid-rich pumpkin seeds, flaxseed oil, walnuts, and canola oil to your diet while cutting back on omega-6-rich corn oil. _____________ Flaxseed oil goes bad quickly.....I grind fresh flax seeds, you get the extra benefit of the fiber as well.....use them on top of soups, salads, cereals and in drinks, etc. Use an inexpensive electric coffee grinder.
