I also make my own tofu, which is far better than anything you can buy. I blend it with organic dark chocolate, sucanat and vanilla to make the most delicious mousse. Tofu can be marinated with oil, vinegar and herbs to make a nice feta cheese substitute. The soymilk maker will also make almond milk. A great icecream can be made with coconut milk and frozen blueberries, just mix them together in a food processor and add sucanat or maple syrup to taste. Try it with raspberries, peaches, strawberries. If you don't like coconut milk, raw cashews blended with water make a great cream substitute. Pinenuts are also great for making salad dressings creamy, while cashews tend to be too sweet for me in a dressing. Butter is hard to substitute for. I've found that a mashed avocado with some Real Salt makes a great spread for bread. I also make a spinach spread. I put a pound of spinach in the food processor a little at a time, until it's all chopped fine. I add 2 cups of sunflower seeds and a cup of pinenuts, juice of lime or lemon to keep it from turning brown, and some Real Salt. It is good to soak the sunflower seeds for a few hours and then drain them, they puree better that way, although a chunky spread is good too. This will keep about a week in the fridge and keep better if you cover it with plastic wrap to keep the air out. Even with a tight lid, there will be air inside the container. If you think that milk is good for you, that you need it for calcium, or you can't live without it, there are sites that might change your mind. notmilk.com nomilk.com milksucks.com Best sources of calcium are dark leafy greens and unhulled sesame seeds.
