Barb Somebody may know better than I do and contradict what I'm going to say, which will be fine... I think that the Hydrous one is going to be the more common and is probably what Jim Humble used. I've seen citric acid in a bottle in the kosher food section of the grocery store. It's labeled " sour salt " and the ingredients list " citric acid " and nothing else. I've bought it by the scoop from a spice shop, that called it " citric salt. " All those sources are fine -- they're plenty pure enough to be safe. If the anhydrous is significantly more expensive, I doubt you need to go that route. Be well, Mike D.
