I use a couple of kilos a year.

I buy it one kilo at a time.

It's a powder, like powdered milk.

Kept out of light, and out of unreasonable temperatures, I'd expect it

to stay good for at least a few years.

But of course, fresh is best.

I've never noticed any deterioration.
