My instructors are all RD's and absolutely wonderful! My favorite class is Medical Nutrition Therapy and it is a fascinating field of study. If I know where you are located, I could ask my instructors. Your doctor should be able to refer you for some Nutritional Therapy also. This is an excellent source right here! There might even be some recipes in the group files section if you take a look.
