Hi,

Just a minor correction:

Lecithin is phosphatidylcholine - a fat with a choline " head group " . Choline

is used to make lecithin, but they are quite different: lecithin is a large

molecule, used in making membranes; choline is a small, water-soluble

molecule. Lecithin is especially important in the brain for neural

membranes. Choline of course is used in acetylcholine as a neurotransmitter.
