Guest guest Posted September 2, 2005 Report Share Posted September 2, 2005 I have been making Kombucha tea successfully for 2 years and all I do is bring the water to a boil, let it boil for only 30 seconds, pour the water into my jar and THEN mix the sugar in, and add the tea then remove the tea in 15-20 minutes, cool completely to room temperature, and add some older kombucha with a yeast to get it started.... I don't take nearly 30 minutes of time to do mine. I guess if you don't have clean water to begin with then you may need to boil it longer. I just use tap water and it comes out great. Oh! For those of you that want a starter!!! You don't need a starter as long as you can find RAW and UNFILTERED Kombucha from a natural food store or a friend. I moved about a year ago and lost my kombucha. So... I just went to the store and got some GT's Kombucha and poured it into my cooled mix and I got a yeast (scoby) just the same as one would have a baby. It just took a little longer, 2 days longer. I boil my water for 30 seconds and I have been successfully making Kombucha tea for 2 years. Chemicals boil off in a lot less time then it takes to kill bacteria. Only I left the tea bags in over night. Brought the water to a boil. Added sugar and tea, turned off the heat. Stirred. Let sit covered over night to cool. Poured in jars, added 'shroom and some 'shroom juice, covered, and stuck it in the closet. Worked like that for several years. One reason is my regular filtered water (PUR system) does not remove floride and about 1/2 the other chemical stuff they add to our water. I get my minerals from juicing raw organic veggies and fruits, but the water in my city is so full of crud it is tragic and shocking. It takes about 5 hours to distill 3 quarts of water and I just love this nice clean water. It is nothing like bottled distilled water from the store. And I'm not willing to lugg Reverse Osmosis water home in plastic containers. My biggest concern about using regular water and boiling it is the boiling doesn't get rid of floride etc. Through evaporation from boiling, the concentration of the florides etc. increase. So I finally decided as depressing as this all is, I only trust my distilled water (which drips through a charcoal filter to polish it...hopefully that minimizes the VOCs). I use organic green tea w/some black to make my KT and I feel good about not having floride in the water since tea is high in floride. I'm up to a good 16oz+ a day of KT and love it. Cheers to all! And yes, it sure doesn't taste anything like the bottled kind! It's sooooo good. We've gone through 3 or 4 of them over the years. So, do you boil the full amount for the tea or just enough to steep the tea and cool that down with the rest? I have been boiling the entire amount but in reading here I am going to switch over to boil and seep a quart or two and then just add my distilled water. That would be SO much easier as I am brewing 2x 2 1/2 gallon containers weekly. I can't boil enough water etc to do both containers at one time. But if I boil 2 quarts I can do both brews and just add the distilled water. My biggest concern is to dissolve the sugar well. I like to wait until the water cools down a bit to add my tea....I was taught to never boil green tea! LOL! I sure love this forum and " meeting " and learning from all you fellow brewers. RE: the Sears distiller - I just picked up a brand new one (used once) on Craig's List for $30.00!!!!! Since my original one is only a year old I picked up this 2nd one thinking I can have 2 distillers going once a week to make enough water to do the Kombucha! When we bought our first distiller Sears still sold the extended warranty with it.....so we were just able to keep replacing it for the price of the warranty........since they really do wear out pretty fast(especially with4 kids). The last one we bought was for my daughter and her new husband.......no extended warranty available! Guess Sears wised up! Our current one is still limping along........it's lasted a lot longer than the others since all our kids have left the nest at this point. It's the only one that's probably outlived it's warranty at this point! It's well worth the investment IMO. You're so right.......this is such a wonderful group of so many fascinating and informative people! I love it here and the OT list.......my favorite two destinations on the net! It's a filter that you hook up to the sink and you contol the pH level from acid to alkaline (I use the acid to clean things) It keeps the beneficial minerals and ionizes the water. You'll become camel-like. :-) I drink close to a gallon of water a day. If I fall short on the water, it immediately shows up. My lower abs get puffy and my rings get tight. It's sad and uncomfortable when they're cutting into you and/or hopelessly stuck on your fingers, and it's rather exhilarating the first time you make a big gesture with your hands and your wedding band sails off your finger and lands on the other side of the room. Although, I've had some scary loose-ring encounters with sink drains. That's more heart-stopping than exhilarating... Guest guest Posted January 23, 2006 Report Share Posted January 23, 2006 A lot of the variances in my water drinking are usually due to the time of the year, how much salt I've been eating (or minerals), what kind of water I drink (distilled vs. our water softener, which uses potassium chloride now instead of sodium chloride and it tastes a lot different, so I know there is a difference in chemical content), and how much I've been sweating. If I run and sweat a lot, I can down pints of water very quickly. Times like now, though, when it's chilly and I don't even break a sweat much, I don't seem to drink very much water. I started to consciously try drinking more milk a few years ago during my better " health " efforts, and some days I do better than others. It's easier for me to drink soy milk now than regular milk because I'm used to the flavor. A lot of people, like cashiers, ask me about it. A lot of people drink that all organic milk, which is more expensive than regular milk. The soy milk always has a later date of expiration. It's actually not more expensive than the all organic hormone free milk, really. I've never had my ankles get swollen that I know of from water retention. I always walked to school when I was young and I've been walking my kids to school the three days a week my daughter has choir club. They say people in southern warmer climates have less salt build-up, probably from more sweating. I don't think kids today exercise enough. Although their PE departments are good about the few times they have P.E. (they actually run laps in elementary school), I still think riding the bus and the lifestyle in today's children is detrimental and so I try to compensate. So far my younger two have taken taekwondo, but that's it. I guess I should try to encourage them to take soccer or something, maybe, and I should prepare myself to be a " soccer mom " --who knows. My mom used to ski to school in Finland, and she still exercises in a " salsa class " on the weekends. I think exercise saved my life, in a way. I was on antibiotics a few years ago. My first six pregnancies were up north and I had severe edema with each pregnancy. It caused me to be hospitalized (pre eclampsia) with pregnancies number five and six. When I was pregnant with number seven I was expecting a nightmare pregnancy. I was surprised! It was my best pregnancy. I have to brag I had absolutely no swelling and it was a summer pregnancy. When summer comes and the grocery stores have bottled water at sale prices, we buy a few cases of Poland Springs in the 6 ounce size, as those fit fine in my purse without being too heavy, as well as the kid's backpack or hubby's coat pockets, so we always carry water with us. We have 2 gas stations, 1 grocery store , 1 doctor and 2 banks. If you need anything else you have to travel about 10 miles to the next town and truthfully it isnt much better. They have a mcdonalds, a cvs pharmacy and a save a lot. Then you go about another 20 from there to get to the major shopping places which consist of lowes, and walmart and a bunch of restaraunts. We have nothing here to speak of. And because of that the one grocery store that is here their prices are doubled what it is at wal-mart so I never buy nothing here. I can actually save money by buying the gas and driving all the way to the closest walmart to shop.
