This is part of the theory that I have not yet made clear. Nitrates in vegetables and other foods, enter the blood stream and settle in the saliva glands. These glands release the nitrates into the saliva where bacteria on the tounge converts nitrates to NITRITES! Nitrites enter to stomach where they encounter high acid and are converted to nitric oxide. Nitric oxide is an extremely potent vasodialotor that causes the cells in the stomach wall to relax, which then allows food particles and other toxin into the blood stream through the intestinal wall (leaky gut). Whatever you have been eating a lot of could give off a particle which enters the blood stream and is then reconized by the immune system as a pathogen ansd from that day forward you become allergic the that food. The foods most likely to do set up this reaction is wheat, rice and other foods found often in food allergies. This is not surprising. If you stay off foods with Nitrates for a few months and follow a certain program designed to help you recover, I suspect that the allergy to wheat will go away simply because your gut will not longer leak into the blood stream. We may even be able to replenish and build up the enzyme that deactivate methemoglobin and cure the problem all togeather. " My feelings now is AVOID all vegetables PERIOD until we see if you respond. This is only a test and not a lifestyle change! If we find out that you do 100% better off veggies and other foods with high Nitrate content, then we can consult nutriionist and do experiements and see what kind of diet and what measures are necessary to recover. If you miss the veggies so much that you can't stand it--- you can always go back to being sick :>>>))). >>>>Any other suggestions I would welcome. Just suppliment with ascorbic acid and riboflavin and stay off vegetables for a week and report your progress. try to get off everything else you take during this period so we can see how you do. Some people might have actived immune systems dumping lots of NO into the system and will not respond as I have. These people might need small doses of hydrocortisone and licorice extract to get their immune system toned down and cause it to stop producing so much NO. But the first step is get off the vegetables and onto ascorbic acid and riboflavin and do not be afraid to use high doses!
