Guest guest Posted January 31, 2012 Report Share Posted January 31, 2012 I do most of the cooking, having gotten into the habit in my single days. Good homemade soup is easy and has way less salt. Tamara Adler's " An Everlasting Meal " , which has some videos that can be found with an easy search, has changed our diet for the better. I boil a whole chicken in a stock with ends of veggies and onion on the bottom. She boils it whole. I cut in half. The stock seasons the meat and vice-versa. I don't overcook. The chicken goes into stuff during the week and I have a pot of stock to use in soup. My son enjoys hoppin-john, but the rice may have to be cooked a bit extra in some broth for your husband. I make mine more moist than my wife's and my son's and chop my chicken a bit after shredding it. It's easy, nutritious, and tastes good. The bad part about canned soup, especially 's and Progresso, is that they seem to start with seawater. It's way too salty and that's bad for hypertensives. It's all chocolate & junk food ---- lots of butter (which I do know from all of you that butter helps get things down) --- & LOTS of soup which out of a can, can be very fatty & unhealthy. So I do feel for him --- he's eating what he can to survive --- but now all these other problems have come up. Gosh, a trip to the doctor for a full work up would be a REALLY great idea, no? -- husband diagnosed with 'A' 7/08, Heller 11/08 > > So get this -- my husband just got home from his parents house, where he was hunting for a week. Had a 6 month checkup, they ordered an endoscopy. He had it done, never called for the results & never went back. Even after the dr sent 3 letters saying he should make an appt for another checkup. Something happened -- she had a stroke -- or she is suffering from dementia -- or something -- but she's become extremely paranoid & won't eat, because they are " out to poison her " . Guest guest Posted February 11, 2012 Report Share Posted February 11, 2012 Since I was diagnosed with A last year I got a juicer, new blender, small meat/veggie shredder and last finally got a food processor. I was getting real tired of a bland diet so I cooked some chicken breast, put it in the food processor, cut my left thumb three times on those blades( when they say the blade is sharp they really mean it - lol ) there was blood everywhere!! Anyways, I finally got the chicken shredded and comes out with the same consistency of parmesan cheese. I made fettucini alfredo with broccoli ( cooked a little longer than most people would do ) and added the chicken. Turned out great and wasn't too difficult getting it down.
