Guest guest Posted February 20, 2007 Report Share Posted February 20, 2007 Now for a great cucumber recipe:Cucumber Lemonade1 cucumber, peeled and cubed 3 lemons5 c water (Filtered water)Agave Nectar RawAdd cucumber and water to a blender and puree. Strain. Add juice of the lemons and Agave Nectarto taste. Serve over ice.---------------------------------------------------------Watermelon-Cucumber SaladIngredients: 1/4 c Apple Cider Vinegar1/4 c Raw Agave Nectar 1/4 tsp Crushed red pepper 4 Cucumbers, peeled, halved 1 1/2 tsp Celtic Sea Salt (to taste)8 c Cubed watermelon 1/4 Red onion sliced thinly Combine vinegar, Agave Nectar and pepper in blender. Blend until mixed. Slice cucumbers and toss with 1 tsp of Celtic Sea salt.Let sit in colander for 30 minutes. Pat dry. Just before serving toss watermelon with salt in a large bowl. Add cucumbers, red onions, and dressing and toss. ------------------------------------------------------------------The flesh of cucumbers is primarily composed of water but also contains ascorbic acid (vitamin C) and caffeic acid, both of which help soothe skin irritations and reduce swelling. Cucumbers' hard skin is rich in fiber and contains a variety of beneficial minerals including silica, potassium and magnesium. The phrase "cool as a cucumber" is not without merit. This vegetable's high water content gives it a very unique moist and cooling taste. Cucumbers, scientifically known as Cucumis sativus,are grown to either be eaten fresh or to be pickled. Those that are to be eaten fresh are commonly called slicing cucumbers. They are cylindrical in shape and commonly range in length from about six to nine inches, although they can smaller or much larger. Their skin, which ranges in color from green to white, may either be smoothed or ridged depending upon the variety. Inside a cucumber is a very pale green flesh that is dense yet aqueous and crunchy at the same time, as well as numerous edible fleshy seeds. Some varieties, which are grown in greenhouses, are seedless, have thinner skins and are longer in length, usually between 12 and 20 inches. These varieties are often referred to as "burpless" cucumbers since people find them easier to digest than the other varieties of cucumbers. Suzi What is a weed?
