Guest guest Posted March 7, 2007 Report Share Posted March 7, 2007 French Onion Soup Recipe By Dr. Ben Kim on January 13, 2004 Healthy Soups Ingredients: 2 tablespoons of coconut oil or organic butter2 cloves of garlic, finely chopped3 onions, sliced into rings1 pound of any mushrooms that you enjoy1 tablespoon of dried thyme leaves (optional)2 1/4 litres or 2 quarts of vegetable or organic chicken brothNaturally brewed soy sauce or tamari, to taste Directions: Cook garlic, onions, and mushrooms in a pan over medium heat with coconut oil or butter. Cook until onions brown slightly. Browner onions equals more flavour. Add vegetable broth, thyme, and soy sauce or tamari and bring to boil. Reduce heat and allow soup to simmer for 10 minutes.
