Going to look for the book asap even if at library. Thanks.

I'm trying to picture the scene without coming overor maybe I can

come over and learn. I think I can bribe Gloria to take a ride as

she is full of teeth talk these days and surely can use a break from

the dentist too, but saving her teeth as well. Gloria, ready to head

to Gayla's house?

Maybe another project for my husband to do before he gets busy

making money! Gayla, thanks for my husband's new project and going

to share with him your post but tell him in another one you said it

is very early. He's not computer savvy so stretching the truth is

not a lie, but a dream in the making!

to Gayla's house?

What time does the plane leave??? There's nothing but snow here. I'm ready to go anywhere at this point! Isn't it supposed to officially be spring in a couple days? Forecasting 19 degrees here tomorrow. We have to be back by Wed. so I can go to the farmers mkt. ! ;-)

Oh girls, you put a damper on my fine weather. It is now overcast and threatening to rain.

We got our pea fence up yesterday and will maybe (if you girls don't make it rain!) get our squashes transplanted today. AH! The promise of Spring is sooooo seductive!

I have enough produce for the entire neighborhood. Does anyone else overkill when they go to the farmers mkt? Eggplants were 3/$1.00, so I buy 3. What am I going to do with 3 eggplants in a week???

My bags are packed! Get the guest room ready. Carol and I will be there in about an hour!!

Hey Gloria -

I LOVE eggplant, but yes, it's hard to know what to do with it.

Grilling it is a great option, there's also an indian recipe that I

LOVE with it. It's called Baghain Bharta I believe. You can google

Eggplant Bharta and you should get a recipe for it. Sweet and spicy.

You can also make a ratatouille with it, similar to Suzi's recipe,

with tomatoes and zuchinni etc. If you grill it, or saute it, just

remember it soaks up oil like crazy if it's not hot enough. Best to

slice it (the skin can be tough, i leave it on but you can remove it)

and liberally salt it, then let it sit on paper towels for abit,

flipping it and doing the same. Then dab the slices with paper

towels to remove the water and salt that beads up off the top.

Otherwise, you'll get a lot of water in whateve ryou're making.

Thanks Suzi. I actually like eggplant but rarely make it. I used to LOVE it dipped in batter and fried when I was a kid. I devoured that stuff. Now I stay away from fried foods so I don't make it that way anymore. But I still like the stuff.

My father used to make a slit for steam to escape, bake them at 350 degrees for about an hour until they were soft. let cool enough to handle. For 1 eggplant, sauté a cut up onion in a little oil, add 4 to 6 fresh peeled, chopped (in large pieces) tomatoes (or 1 can tomatoes, chopped) and 1 green pepper, cut in 1 inch pieces. Cut eggplant in half, scoop out insides and cut in 1 inch chunks. Add to the pot and simmer for a few minutes to blend flavors. Salt and pepper to taste. Cutting each veggie in large chunks lets you "feel" each piece of different vegetable, as he used to say.

Gloria, you can also bake them (see other recipe I posted), scoop them out, mash them. Add fresh crushed garlic, olive oil, tahini and lemon juice.

That's probably as close to food as I can make them. <G>
