My soups turn out to be more like stews as when I get started, I begin to throw everything in

Same here. I made lentil soup yesterday. I just poured some over a bowl of rice for dinner tonight. It's like a thick sauce. That's the way all my soups turn out because I also cram them with so much stuff. I could live on soup. Make it year round and never get tired of it.
