All this talk about homemade soup and bread is making me very, very hungry. [ ] soup recipe > I'm not a fan of cauliflower or broccoli, but this soup made a lover out of > me. > Even my veggie hating son like it! > > Cream of Cauliflower and Broccoli Soup > > 1 head of cauliflower - chopped and put ½ aside > 1 stalk of broccoli - chopped and put ½ aside > 1 peeled potato - chopped > 1 onion - chopped > 2 stalks celery - chopped > 2 T. olive oil > 2-4 cloves of garlic > 5 cups of milk (2% or soy) > 2, 14 ounce cans of chicken broth (I used vegtable broth) > Salt and pepper to taste > Sauté onions, garlic and celery in olive oil in large soup pot. When onions > and celery are translucent, add milk, chicken broth, cauliflower and potato. > Simmer for about 30-40 minutes. Stir occasionally and do not let the soup > boil. Once the cauliflower and potato are soft, let soup cool and then blend > in a food processor. Return soup to pot. Add second half of chopped > cauliflower and chopped broccoli to soup. Simmer again for 30 minutes until > vegetables are soft. Salt and pepper to taste. My favorite cooking and gardening buddy moved from my neighborhood a few years ago, and I miss her so. If I were your neighbor, I may talk so much that I might not to be able to sample much delicious food though - but you know that already. Here is Jane Brody's recipe - " Curried Cream of Broccoli Soup. " It's from her " Good Food Book " and, luckily, someone already did the work for me and it's on the Net: http://communities.prodigy.net/food/ylind012.html Very easy and tasty. Veggie soups are a great way to get those veggies in! I especially like the pureed ones, although it takes a little getting used to eating green soup! Guest guest Posted March 11, 2002 Report Share Posted March 11, 2002 no i don't have a food processor. i just bought one of those quick chops on tv. doesn't seem the blades are very sharp, and it seems i still find myself chopping. i'll be chopping later. i don't have a crock pot either and all your talks of soups and stews. i am going to make a pot roast today. my sons first day at the animal hospital. i was going to do it yesterday, i baked a cake for dessert. next thing i knew i wasn't feeling good. my son made some dinner and i will try again tonight. kathy in il Quote Link to comment Share on other sites More sharing options...

Guest guest Posted February 27, 2007 Report Share Posted February 27, 2007 Hearty Chickpea and Leek Soup Recipe By Dr. Ben Kim on November 02, 2004 1 can of chickpeas or two cups of dry chickpeas2 leeks (most grocery stores sell them in groups of 3)1 small potatoVegetable brothSea salt and pepper, to taste (optional) If you use a can of chickpeas, rinse them well and bring them to a boil for a minute to help get rid of any preservatives. If you use dry chickpeas, soak them in water overnight and cook them over medium heat for about an hour or until tender. Cut leeks in half lengthwise and soak in water to remove dirt. Chop leeks and potato into bite-size pieces and boil them in just enough water to cover them for about 10 minutes or until tender. Add chickpeas and allow all ingredients to sit on low heat for a minute or two. Blend ingredients in a food processor or blender. Return blended mixture to pot, and add vegetable broth until desired consistency is reached. Season with sea salt if desired. Serves four. Enjoy this hearty soup with a slice of toasted whole grain bread. Suzi What is a weed?
