Guest guest
Green Beans Did you know that the wealth of vitamin K (122% daily value) found in green beans plays an important role in the mineralization of bones, helping to keep them strong and healthy? Although calcium and vitamin D are often the nutrients highlighted in discussions on bone health, current research is increasingly revealing the importance of vitamin K. A study conducted at Tufts University found that higher intakes of vitamin K are associated with high bone mineral density. This study, which included more than 2,500 people, found that women who consumed an average of 300 micrograms of vitamin K per day had greater bone density than those who consumed less. So, vegetables like green beans, which are excellent sources of vitamin K, become important contributors to bone health. But the benefits of green beans do not stop here. They are also a rich source of other vitamins and minerals, many of which can act as powerful antioxidants that help combat the free radical activity assoc! iated with increased risk of both cancer and heart disease.
