Zucchini Detox Salad INGREDIENTS 3 medium zucchini, chopped1 tomato, chopped1 onion, sliced1 clove garlic, minced3 tablespoons olive oilSea salt and cayenne to tasteLettuce leaves2 carrots, shredded6 radishes, sliced1 cucumber, sliced4 tablespoons olives2 tablespoons fresh parsley, chopped1/2 cup crumbled feta or cubed cheese of choice, optional1/2 cup cooked beans, optional 1. Lightly steam zucchini and allow to

cool. Place in large mixing bowl, add tomatoes, onion, and garlic, and mix gently. Add olive oil, sea salt, and cayenne. Mix and refrigerate for 2 hours. 2. To serve, line a platter with lettuce leaves and scoop zucchini mixture on top. Arrange carrots, radishes, cucumbers, and olives around the edges.
