Vegetable Curry Use any 5-7 vegetables in season for this recipe.2 carrots, chopped or coarsely grated2 stalks celery, chopped1 1/2 cup cauliflower florets1 1/2 cups chopped zucchini4 Tablespoons chopped onion4 tablespoons chopped parsley1 garlic clove, finely minced2 Tablespoons walnut oil, or hemp oil or flax seed oil1 teaspoon ginger juice1/2 teaspoon curry powder, or more to taste1/2 teaspoon cumin Toss first 5 ingredients together. Whisk together garlic, oil,ginger juice and spices, pour over vegetables and toss. Allowflavors to blend for 1 or more hours, toss again before serving.
