NEED TO LOSE TWO

Well, I cooked over the weekend and I will admit, I ate a little too much of my own cooking. So when I got on the scale Monday morning, I discovered that my weight was up two pounds. Oh, I know what you're saying, ", what is two pounds...on you?"Uh, excuse me? Well, it's a lot! Hey, if you woke up one morning and discovered you'd gained two pounds, would you be very happy? (Uh-huh, I didn't think so!)

So, I've decided that every night this week, I'm just going to have a salad. Notice, I didn't say I was going to have big, huge whopping salad. No, I'm just going to have a nice-size salad, each night this week. I'm alternating between fruit salad plates and vegetable salads all week long.Monday, I had cottage cheese with chunks of pineapple in it. I also added some apple slices and blueberries. That salad was really very tasty. See, I must admit that for a period of my life I couldn't even look at cottage cheese. That's because I was forced to eat it on so many of the diets I was put on to loose weight when I was very young. I feel very differently about cottage cheese today, though. It really is a tasty way to fill up your tummy without filling it up with a lot of calories.

Tuesday night, I had an Italian salad. I used Romaine lettuce, sliced green olives, shredded carrots and cutup sun-dried tomatoes. My salad dressing was simply olive oil, lemon juice, salt and pepper. I should add, that's really about the "cleanest" salad dressing you can make. Olive oil, combined with lemon juice just really brings out the flavors in fresh produce.Tonight, I'm having something called cottage cheese chopped-suey. Here's how I make it. I cut up in small chunks, radishes, cucumbers and celery. Then I mix the veggies with the cottage cheese and serve it on a bed of shredded iceberg lettuce. This one doesn't need a salad dressing. It's so creamy, crispy, crunchy and tasty, all by itself.Tomorrow night, I'll have another fruit salad with fat-free French vanilla yogurt with slices of strawberries and pears. I plan to eat salads every night this week and, watch, those two pounds I gained will soon be...gone! And you know how nice it is when you get on the scale and see a two-pound weight-loss!

And by the way, don't forget to look though your spice cabinet for some fun, tasty additions to your salads. (Salads love spices!) Anything to keep the calories low and the flavors high.Hi and good-bye...to those two pounds, too!Love,
