Invest in metal kabob/skewers and you'll never have to soak bamboo sticks again. Serving: 4 Prep Time: 10 minutes Cook Time: 5 minutes Total Time: 15 minutes INGREDIENTS: 1 lb fresh scallops Melted butter 1/2 cup sour cream 1 cup coconut milk 2 scallions, finely chopped Lime wedges DIRECTIONS: Thread scallops on wood, bamboo or metal skewers (if using wood or bamboo, soak skewers in water for 30 minutes before threading). Season with salt and pepper and brush with butter. Combine sour cream, coconut milk and scallions; blend well. Grill scallops quickly over hot coals, approximately 1 minute on each side. Serve on a platter garnished with lime wedges. Give each guest a small bowl of dipping sauce and enjoy. To keep this meal lower in fat, use fat-free sour cream.
