It's all my clubhouse members and website friends....Are you making your list...and checking it twice... trying to find out who on your list has been naughty and who's been nice? Have you been naughty this year? Or nice? I hope you've all be nice...and I especially hope you've been nice to yourself and taken care of yourself this year. I know December will be a busy month for all of us. I'll be staying home for most of the month...spending time with my Hattie and enjoying my decorations while I focus on teaching at Slimmons and on spending time with my clubhouse members. And oh yes, we'll be having our clubhouse chats this month! I'll also be visiting the Edgewater Casino in Laughlin, Nevada on the 10th to teach a big sweatin' class. And some of the things I've taped will be airing this month. So keep your eyes open. And if the Dr. Steve Show airs in your area, I'll be on this weekend. Check your local listings for the time. Now...As far back as I can remember, 3 years old, my parents always took Lenny and me to Maison Blanche Department Store to wait in the Candy Cane Lane to sit on Santa`s Lap and whisper our wishes in his ear. Of course, we went away with a beautiful 8x10 photo of Lenny and me and the "Jolly Man in Red"! By the time I was 6, I planned my visits to Santa very carefully. A week before the event, I began working on my wish list for Santa, thinking carefully about what I wanted and using my best Catholic school handwriting to win St. Nick over. I always handed him the list with a small tin of homemade sugar cookies! Once, I asked my class at Slimmons what they asked Santa to bring them when they were kids. Here are some of their answers... "When I was 7, I asked Santa for a new pink bike with streamers on the ends of the handle bars, and on Christmas morning, it was right there under my tree!" "I wanted a long red coat that was trimmed in black fur. I got it Christmas morning, and it was so beautiful! I wore it to Christmas mass, and felt like a princess!" "I asked for Mr. Potato Head, a Tiny Tears doll, and of course, a puppy!" My next question for my students was, "If you could sit on Santa`s lap now, what would you ask him for?" "I want Santa to make my father feel better." "A meaningful job that directly affects the wellbeing of others." "That no one on earth goes to bed hungry." "For my children to find some sort of happiness in their lives." "To have more self-confidence and more self-esteem." "I will ask Santa for once and for all to help me get control of my eating and finally achieve my goals." "Peace. It`s sort of corny, but in these times we live in, we need it more than ever." Wow! The Santa lists from the grown ups were so different! Wishes are wonderful! The day you stop wishing is the day you stop believing, and when you stop believing, well, then it's really all over. So, I want you to keep wishing! Think about what you'd ask Santa for this year...and write down your wish list. And then start thinking about what YOU can do to help Santa make your wishes come true. Now, I know some of you are wishing for a December recipe from me...and I won't let you down. Here you go... Red And Green Christmas Meringue Cookies (Serves 12) 2 Egg whites 1/8 tsp Salt 1/4 tsp Cream of tarter 1 tsp Vanilla 3/4 Cup confectioner's sugar Red and green food coloring Preheat oven to 250. Line baking sheets with parchment paper. With an electric mixer, beat egg whites on medium until foamy. Add salt, cream of tarter and vanilla and beat until stiff peaks form. Add sugar a little at a time until it is all incorporated. Separate meringue in half and add 1 drop of red food coloring to ½ recipe and 1 drop of green to other batch and mix to combine. Place meringue in piping bag and pipe cookies onto parchment paper. You can use a little meringue in the corner of each sheet to hold it in place. Bake for about 1 hour, rotating and turning baking sheets throughout cooking. They are done when they can be lifted from the baking sheet easily. Test by removing one and cooling a little see if it breaks apart easily and is crisp and dry (it is done). It won't hurt the others to let them cook while you are checking. Additional Tips Other extracts work well in this recipe as well, experiment with different colors and tips on the piping bag, as you like. It is very important when you are beating egg whites that there is no yellow and the bowl you are mixing in is very clean and dry. Mixing should be done at room temperature.
