Wednesday, 13 June 2012 So, how are you doing with the Salad-A-Day challenge I issued you in my first day of June message? Since we're getting into the summer season, many of those delicious summer vegetables are at their peak...which gives us the opportunity to make some pretty, colorful and very tasty salads. Now the great thing about salads is that they fill you up without adding lots of unwanted calories to your daily food plan. But there's another "S" that should be added to your weight-loss food program this summer...SOUPS! With all of the summer vegetables available these days, what can be better than a bowl of fresh summer vegetable soup? Soups are generally more popular in the colder winter months. I mean, nothing warmed you up like a bowl of your mother's delicious chicken soup, right? (My mother made the best!) But with all of the summer vegetables available these days, what can be better than a bowl of fresh summer vegetable soup, huh? Hey, no offense to the 's Soup Company but I'm sure you'll agree, no canned soup compares to that fresh pot of soup you make right there at home. Soups are a filling and healthy way to add low-calorie tastiness to your weight-loss program during the summer. Now I'm not talking about those high-calorie cream or butter-based soups. They can be packed with lots of fat and calories. You want soups that're low in sodium and based in broths like beef, chicken or vegetable broth. I've told you before, if you ever roast a chicken or beef...save the broth! Pour it into little ice cube trays and freeze them. Then, when you get ready to start a pot of fresh soup, begin your recipe with the frozen broth cubes. Canned broths are fine, too. Just be sure to get them in the low-sodium variety. What you put into your vegetable soup is limited only by your own imagination. What you put into your vegetable soup is limited only by your own imagination. Carrots, corn, fresh beans or peas, squash, broccoli, tomatoes, oh, the combinations are endless! Just remember, when cooking your soups, some veggies, like carrots or potatoes take longer to cook. They should go into the pot first then add the faster-cooking vegetables toward the end of your cooking time. (If you're a member of my Clubhouse, you can find lots of delicious soup recipes there.) When cooking your pot of soup, experiment and have a little fun. Toss in some pieces of leftover roast chicken or beef. Add some of your favorite herbs or spices. By using them, you can just about eliminate the need for adding much salt to your soup recipe at all. What will it be today, soup or salad? So, what will it be today, soup or salad? Well, the nice thing about both is that they can be loaded with nutrition without loading you down with calories.
