I agree about this. I've been making beet kvass and taking little

swigs throughout the day. It tastes like wet earth. But when it's

chilled nicely it's tolerable.

3-4 organic beets, peeled and cut into 1 " chunks

1/4c. whey (see below)

1 Tbsp. himalayan pink salt

Filtered water

Put everything into a half gallon Ball jar and fill with clean water.

Leave at room temp. for two days then transfer to fridge.

Whey can be made by leaving good, hopefully, raw milk at room temp.

until it separates into curds and whey. You can also use yogurt by

placing it in strainer, lined with a tea towel, over a bowl and

leaving it long enough to strain the whey. The resultant cheese is

cream cheese and can be made into all kinds of yummy things. Use

whey, not just for beet kvass but for fermented veg and soaking grains

and porridges, which are all easy on the digestive tract.
