I use left over Kefir culture storage milk, in bread making - about half a cup to a 2 pound loaf - I keep the kefirised milk in the fridge door and chuck it into the bread mix like a sourdough culture. We find we can always tell when the Kefir is in the bread and I think it does add to fermentative effect in the gut, which is thought to be anti bowel cancer. Some can't handle it, cos it stirs their gut up too much. So I am inclined to think that the organisms do survive the breadmaking machine and probably ovens also...some of them, at least. yours, Lizzie in Australia.
