Guest guest Posted November 24, 2008 Report Share Posted November 24, 2008 This is my first post. I started making kefir a couple of months ago. But my kefir grains don't show any sign of growth. And it takes two days for the milk to develop in kefir although I'm only using 0.2 L at a time. Any suggestion how I could improve the conditions for my kefir grains to make them feel 'happier'? " Kefir cultures do not grow much in a short time. The best result I've ever seen was from some cultures I gave to a Swiss German friend who has access to an organic (cow) dairy. She used to keep the cultures in the organic cow's milk and culture organic cow's milk with the cultures. I was amazed at how much culture she grew. Evidently they love to work in organic milk, as they did way back in the Caucasus in yak's and goat's milk or whatever - not just to live in it when in storage and resting from work. I use about 2 soupspoon fulls of Kefir culture to 2 pints/one litre of cow's milk. If you don't really have enough culture in the ratio, maybe cos you don't have enough culture yet - it should be no problem but just take a bit longer to culture the milk, cos you have an underpowered culturing engine. We are coming out of winter in the s. hemisphere now but in the winter I put my yogurt maker and my Kefire culturing jar also, on a coffee table in an equator facing window. That made the culturing go a lot faster. Usually I culture for 2 days on the kitchen benchtop, or in the winter for 2 days, on the equator facing window. yours, Lizzie in Australia.
