Guest guest Posted November 24, 2008 Report Share Posted November 24, 2008 I just received water kefir grains last week and fermented two batches using bannanas, cup of organic apple juice, three cups of water, and 4 Tbs of organic sugar. Only one of my young children liked it, well tolerated it, the other spit it up twice. " I guess to spit up might mean to vomit... Looking for more of a neutral recipe more like plain sugar water that I can use with secondary fermentation with various juices to find out what the children will like and not stain or harm the grains. Any ideas? " I use tranmogrified Kefir cultures the same way we use Tibicos. We put about a soupspoon full into 2 pints/one litre of apple juice or apple and blackcurrant juice - wait for 2 days - then strain and put the Kefir culture back into their storage jar which contains sugar and water. I use raw sugar in the storage jar. Then we keep the fermented product in the fridge and drink it with mineral water - about 20% kefirised juice to 80% water. We usualy have it once a day throughout the hot weather and the warm weather, cos it has so few kilocals cf. milk kefir. Its also good for those allergic to milk. We tend not to give it to kids though because it has such a strong and distinctive taste. We tend to give them milk kefir, maybe with some kefirised juice on top like raspberry or apricot juice - say after dinner at night. We never give kids drinks with sucrose in them - or at least we are not supposed to - ecause of acne, heart disease, cancer and tooth decay. yours, Lizzie in Australia. The youngest of our brood is casein and gluten sensitive and thus we are using water kefir with him to rebuild/restore his digestive system.
