A quick question: regarding how to cover the jar, I am using a doubled over

paper towel fastened on with an elastic band. Is this good or should I be

doing it differently to allow more or less air in?

I typically use a screw on lid because I like mine to be bubbly and

effervescent.

The only time I use the paper towel method is when I'm making sour dough

starters so that it can capture yeast from the air.
