Guest guest Posted November 21, 2008 Report Share Posted November 21, 2008 I am using a " combo scoby .. mother of vinegar " ??? to hopefully make vinegar. Its sort of an accidental brew after I've been trying to get apple juice to brew vinegar with super hard apples. We'de bought an apple peeler-corer as it was just way too hard to hand peel and core those suckers, especially with a sore thumb and index finger I've had problems with. Then the juicer broke down so only had a half-gallon of liquid with a fair amount of almost applesauce in it. Well, I had read DOM's discussion on the closeness of the scoby and MOV & inoculated the batch with my vinegar. It was the most expensive our local store had and said natural but was still doubtful whether it would really inoculate like Braggs so added some KT to help inoculate .... it grows like a scoby, out across the top, seems to be clearing up the pulp. , (Foodfortot), said I could probably keep adding pulp etc. for vinegar. Will it act as a " continuous brew " where some clear can be withdrawn & replacement juice added or is this totally experimental Marilyn, after my good start with water grains, and dehydrating some, they slowed down considerably and now seem to have problems keeping them growing and happy but they are surviving, so I don't have any to share now .. otherwise would. I am trying less DE, pinch soda, and bit of eggshell...fresh fruit bits like apple or pear. I am now trying the milk gr. to water type for extra water kefir. Sounds workable. Made my first batch tonight to brewing. This sounds interesting. Best to all other newbies and experienced in unearthing the full range of possibilities with these live gems.
