knows anything about kefir at all. "

Yeah that would be about right - most of the knowledge is in Russian Jewry

who have come down on the Return. They don't bring Kefir culture with them

however. It started cos I chatted with a guy, then he asked if I could help out

teaching, so I get emails from people all over Israel that he passes on to me -

and I send info back to them.

No one at any of the health food shops

knows what I'm talking about.'

This is not satisfactory and not good for the total Kefirisation of

Israel! (smiles)

You've got cultures, right? You going ok fermenting with them? What sort of

milk do you ferment?
