Oops, Marilyn,

I'm leaving my kefir grains in for 3 or 4 days until there is full separation.

Then I drain the product and make cheese (quark) for Budwig.

My grains are flourishing, so I suppose it is OK.

By the way, what exactly are KEFIR grains?

They won't last forever doing it that way. Eventually they will stop growing

and start to go backwards. What a lot of people do if they need it so sour

is still strain on time but leave the strained kefir out until it is ripe.

They are a symbiotic culture of bacteria and yeast.

Ok since I am new with making milk kefir, what are the points in order to

maintain or ameliorate the health of my kefir grains?

Strain your kefir and taste it. Adjust the milk up a little if it is too

sour. When there is no more room for extra milk in the jar, remove some

kefir grains. Give them a fresh change of milk every day. That's all you

really need to know.
