I always replace buttermilk in recipes with kefir, and it turns out

beautifully. I find that breads rise higher when made with kefir.

First time I made my buttermilk biscuits using kefir they rose so much

that I had one giant biscuit, rather than a whole pan of normal sized

biscuits, LOL!
