Most breeds of goats have less milk solids so your kefir will be much thinner. You still go by taste to see if it is done because you will be waiting forever for it to get thick. See, my danes always get crazy when I add some goat milk to their diet ..... so this is why I have tried goat milk with my kefir grains. Please don't laugh, but how should it taste ???? I guess the taste of kefir made with goat milk is different ... so how to know that it is ready otherwise that my grains have been sitting for 24 hours? Guest guest Posted December 6, 2008 Report Share Posted December 6, 2008 Kefir should taste pleasantly tart. Kefir only tastes as good as the milk you start with. If the goat milk is pasteurized, it will have a " goaty " taste because the fat has been damaged by heat. Your kefir will have a tart " goaty " flavor that a lot of people don't like. I can't stand it. Even raw goat milk could taste goaty if it wasn't cooled properly or the goats have a mineral deficiency. Different breeds of goats make the kefir of different consistencies. Standard size Swiss breeds make thin kefir, but it still can be very smooth and have a nice feel to it going down. I happen to raise Nigerian Dwarf goats and their crosses. I call them little goats. They have a very high butterfat and high milk solids, right on par with sheep milk. The milk is delicious and kefir made from it is superior to anything I've ever had.
