Kefir grains are different from house to house, even within Bulgaria. That is because there are different living conditions. Living conditions are: temperature of kitchen, kind of milk you are using, what yeasts are floating in the air of your home, your particular method of making kefir, etc. So no matter where you get your grains, they will adjust to YOUR home within about six months. Guest guest Posted May 8, 2008 Report Share Posted May 8, 2008 I wanted to add that 2% milk gets it's 2% from powdered milk. Which is, by the nature of how it is made, damaged cholesterol. Skim milk doesnt have much of anything really. Except that hog farmers feed skim milk to their hogs to fatten them up. This I read from the book Nourishing Traditions. I understand your frustration in not being able to get raw milk. I have been unable to so far as well. Also, there is the opinion, which I agree with that high cholestrol has no relationship to heart disease. Although people with low cholesterol have a higher all-cause rate of death. I think it is below 180 And considering the low cholesterol rate and ratio that doctors advise---especially for people like my husband who has had a quad bypass---it is definitely scarey.
