I am making my first attempts at Water Kefir.I have watched a few of the videos on " Y'all Tube " and it sure looks simple and straight forward,at least to a novice.The question I have now,refers to the mention here and other places of adding lemon and raisins,and even eggshell.Is this all necessary,or am I stunting my WKG by not adding them?I saw one video where a gal added a lemon slice,and then added baking soda (for calcium).No offense,but if you are adding lemon to lower ph,and then add baking soda (which tends to raise ph),is that not self defeating? Anyway,all any of us want to do is to be successful in our fermentation endeavors,and I would really appreciate any information on the addition of lemon/raisins/eggshell. Thanks so much!! Emir. If your water is filtered it isn't nutritious enough for the grains to thrive. People add fruit until the 2nd fermentation period -- for flavor, not for acidity, I believe. (I don't do a second fermentation or add fruit, I'm happy with it plain.) If they aren't growing at all, that's when you start tweaking the recipe.
