You can freeze your kefir grain until you're ready to use it again.

Subject: Freezing Milk Kefir products

Due to severe health problems, I have decided to adhere to a restrictive

diet for the next 6 weeks, which does not allow Milk Kefir or cheese.

(Heartbreaking - I know!) I need to figure what to do to keep my MKGs happy.

I made Kefir cheese before, and just LOVED the taste. Does it keep well when

frozen? If so, I would continue to make kefir, and freeze the cheese, until

I can eat it again.

For what it's worth..

My keifer was tasting off - kind of a plasticish goaty taste (?) - right

from the beginning. It just didn't taste good at all, so I started letting

it stay for 3 or 4 days and then strained to a firm cheese and gave it to my

chickens who thought it delicious. After a while I didn't really have any

more grains, probably from leaving it for so long (?)

The other day I took some back up grains (same initial batch) from the

freezer and my kefir is very good right from the first day. Not sharing

with the chickens anymore. LOL!

Has anyone had experience where freezing improves the quality/flavor?

Yes, I realize I could freeze the grains, but I also have daily goat milk

I'm not able to consume now. I would like to use it to make cheese, and

freeze the cheese for later. Does that work with kefir cheese? Just looking

for a way to preserve grains as well as find a use for the milk and preserve

food for later.

Hi Al,

I rinsed them in filtered water, drained them and then put them in a ziplock

bag, then another, then in a Tupperware type “boxâ€. I don’t think I even

rinsed them when I took them out (it seems I would have though). They looked

fine after sitting on the counter (still in the bags) for about a half hour to

defrost.

I freeze my extra milk kefir grains by the tablespoon full in ice trays, and

fill to the top with milk, and then I freeze it, plastic wrap and wax paper wrap

it and stick it back in the freezer. They seem to do o.k. when I thaw them out

and bring them back to life with fresh milk again. It takes about four days of

feeding them every 24 hrs before they taste " normal/yummy " again. Terri Gano
