frozen milk kefir?

I am very new to the group so this question may have been answered at some

point so I am sorry if this is a " tired " question.

I am making about 2 cups of milk kefir a day and we use it mostly to make

smoothies. Sometimes I end up with a bit too much and wondered if I could

freeze it into cubes so use for smoothies later and still have ALL of the

great benefits?

another question is... How long can it stay good in the fridge before it

goes " bad " and shouldn't be consumed?

Thanks for all the great info this loop has offered so far!! I have already

grown enough grains to share with a friend!

Are you talking about freezing the grains or the kefir itself? Freezing the

grains changes them and I think someone mentioned

recently that it may kill off some of the beneficial bacterias or yeasts as the

kefir then comes out sweeter. As far as the kefir going

bad in the fridge...it's not bad, it just goes more sour. You can strain the

whey off and make kefir cheese...it's wonderful...even if it's been

in the fridge for several weeks. I like my kefir cheese with basil.

No, not freezing the grains, just freezing the kefir that I have made.

Rather than let it get too sour in the fridge I thought about freezing it

in an ice cube tray and keeping the cubes for smoothies for times when we

need even more than I have made. But I don't want to do that if it damages

the probiotic value of the kefir.

I do know know the specifics after freezing, only what others have said that it

appears that some of the beneficial bacterias and yeasts die when you put it in

the freezer, so you may be losing some of the nutrition by freezing it. I have

mine in the fridge and it really doesn't change much being in there and won't

sour very quickly. I've had a bowl of kefir cheese in my fridge for weeks and

it still tastes the same as when I first made the cheese.
