Well, I'm very new to water kefir, I traded some milk kefir grains for some water kefir grains from someone on an on-line forum I've been on for a while. I really enjoy water kefir a lot, but most other people who I've had taste it make faces when they do so. I also like plain dairy kefir though, and I think that while the flavor is nothing the same, if you like plain dairy kefir, you may also like water kefir plain. It can also be flavored with fruits or juices, and how long you let it ferment makes a big difference in flavor. The taste reminds me of some Kombucha I've had, although not the commercial types I've tried. As I said, I like it plain and at almost any level of fermentation (is that the right word?) I've tried. I do a shorter ferment and add lemon juice to it for my 7yr old dd, and she calls it " strange lemonade. " My 4yd old won't drink it, but my 1 yr old likes the novelty of it and drinks a bit of mine each time I have it. They seem to be much more temp sensitive than booch. On that web site, he also tells you how to make them, with or without non-preserved juice. I've made them when it was in the 60-70's with windows open sitting out for 24 hours and it was fizzy, plus a little sweet. I guess these temps favor the bacteria. Â Now with my air set to 76 (with windows closed of course), when it sits out for only 24 hours, it is MUCH more fizzy, active and well, bland. You can stand and watch a lot of movement inside. I forget now, but higher temps favor another part of it. Anyway, try them out. One more thing, they don't seem to multiply (grow) very much. Maybe I'm doing something wrong, but they don't for me. Please write me off list if you are interested. Mine are too happy and growing too well! hehe. Started out with less than 2 cups and have given some always and still have over 7 cups of grains left! Only need a half cup. I am taking some to my DD this week too.
