You will need to add: 1) calcium--in the form of [boiled, cleaned] eggshells or bicarbonate of soda [baking SODA]---- as well as 2) acid (either lemon or lime juice/slice). I am not sure what ratio you need, and really I don't think it's a precise amount, but I make 1 quart of water kefir and I toss in a large pinch of baking soda (about r 1/8th teaspoon) OR use about 1/2 crushed boiled and cleaned eggshell. Some people toss a slice of lemon in but I use lime juice, about 18th teaspoon. My lime juice is in a bottle but it's 100% lime juice, no preservatives, nothing but pure lime juice.
