You aren't doing anything wrong. It is normal and common for the whey to

rise to the top when the kefir is aging in the fridge. Just shake well and

serve.

Hello All.....I am new to this so please be patient with me? My kerfir is coming

out strange. It's becoming more of a paste and after storing in the fridge, it

appears that the paste sinks to the bottom and clear water rise to the top. I

have made four batches so far with the first being watery, the second batch was

perfect, but the last two was as described above. What am I doing wrong here?

My experience is that kefir sometimes goes through different phases and so I

don't worry about that anymore. If it looks too thin after 24 hrs, I just let it

ferment an extra day or two. It usually just takes a longer ferment. Make sure

you are only using a tablespoon of grains to a quart or two and no more than

that. Too many grains ferments milk too fast and by the time you wait 24 hrs, it

has fermented 36 and you have all whey.

When I stir my curds and whey at the point of straining the grains, it is always

watery. But then I will pour the kefir into a jar with a flip top lid that seals

tight and let it sit for several days. It is always good.

I lost a 1/2 gallon mason jar by putting a tight fitting lid on. The pressure

got so high it just cracked the bottom. I leave mine on a little loose to allow

it to expand.

I am sorry you lost a 1/2 gallon mason jar. Those are always nice to have

around. You just dont see them often either. At least I havent been able to find

them. I havent had a problem with pressure. While I do keep my lids on just

slightly loose, or just normal, I make a point of having at least two inches of

space between the milk and lid. The lids when turned will leak a bit when

turned sideways.

I get my 1/2 gallon mason jars from Agway. I don't know if you have one of

those in your area. I think Tractor Supply has them also.
