It's becoming more of a paste and after storing in the fridge, it appears that the paste sinks to the bottom and clear water rise to the top. I have made four batches so far with the first being watery, the second batch was perfect, but the last two was as described above. What am I doing wrong here? Thank, Jimi My experience is that kefir sometimes goes through different phases and so I don't worry about that anymore. If it looks too thin after 24 hrs, I just let it ferment an extra day or two. It usually just takes a longer ferment. Make sure you are only using a tablespoon of grains to a quart or two and no more than that. Too many grains ferments milk too fast and by the time you wait 24 hrs, it has fermented 36 and you have all whey. When I stir my curds and whey at the point of straining the grains, it is always watery. But then I will pour the kefir into a jar with a flip top lid that seals tight and let it sit for several days. It is always good. At least I havent been able to find them. I havent had a problem with pressure. While I do keep my lids on just slightly loose, or just normal, I make a point of having at least two inches of space between the milk and lid.
