As far as cholesterol and fat in your diet, you don't need to be afraid of fat as it is food for your brain. Our brains are made up mostly of fat and when you are eating get a low fat diet, you are depriving your brain of much needed food. Al Draining whey off top of kefir I drain the settled whey off the top of the kefir after I refrigerate the kefir because I like the taste and consistency better. Maybe I will do that in the future, and drink the whey separately as it is so good for you. We routinely do smoothies and I add a touch of kefir to it.
