You need to make milk kefir with them and do an occassional round of coconut, or use extras for the coconut. Do a search of the archives because I know this has been discussed. Guest guest Posted November 18, 2011 Report Share Posted November 18, 2011 Auriel, I have made kefir with coconut milk/water, once with fresh young coconuts and a couple of times with stuff in a carton that I got at the grocery store. As I recall, I used my Water Kefir Grains. Coconut juice is REALLY sweet naturally. Guest guest Posted November 19, 2011 Report Share Posted November 19, 2011 Hi Auriel, I'm lactose intolerant and I've been making coconut milk kefir since I got my grains, and so far so great. I use canned coconut milk (from Wal-Mart, $1.20 a can, and it's Golden Star brand. It only contains coconut milk and no guar gum, which most of the others have.) I use a can a day. The grains grow pretty fast so every few days, I put a spoonful of grains in with my drinking kefir, just because I don't want to make more than a can a day. It can get really thick by the third day if I'm not careful about taking extra grains out. And it is soooo delicious! I put the strained thick milk in a jar and keep it in the fridge for 24 hours, which usually makes it thicken even more. Then I blend it with frozen cherries or mangoes or bananas. Sometimes it is a very thick shake, and other times (when I didn't take enough grains out) it is like a thick yogurt I eat with a spoon. I don't add any sugar at all. The most important thing I've found is to constantly monitor the amount of grains for my single can of coconut milk.
