Guest guest Posted July 8, 2012 Report Share Posted July 8, 2012 Dear Larry, I know that I am not exactly answering your question, but understand that your kefir will eat most if not all of the lactose in the milk. And as far as how the kefir will fare in lactose free milk, I am going to take a wild guess and say really poorly. The kefir in lactose-free milk would not be adapted to their environment. If you shake your kefir in regular milk often and culture the new kefir for one day after your remove the grains for the next batch, there should be zero lactose left in the kefir batch. Guest guest Posted July 8, 2012 Report Share Posted July 8, 2012 People that are lactose intolerant can't consume pasturized dairy, but can consume raw dairy without a problem...that is if there's no GMO, pesticides/herbicides/fungicides/antibiotics in it.
