When I soaked it with Kefir.. it tasted so much better... lemon juice can be a bit overpowering... Yum .. and it keeps and keeps and keeps digesting the sugars, etc., making everything tender etc. easy for dentures, etc. Add honey or Stevia to serve & you've got a wonderful diabetic or celiac suitable dish I understand. The stevia sweetens to taste w/out cals. It is yummy. I use the whole raw oatmeal, no cooking .. just soak with cloth or coffee filter over your bowl or container ... can do a " batch " for a family that will last for days. Joyce M. I've always been given oatmeal made with milk/butter/sugar/cinnamon/vanila extract/pinch of salt. I'm curious about raw oatmeal.. I did see some youtube videos on it... Oh.. !! I saw a video on raw corn chowder ! If you need lime (not the fruit)to ferment the cornmeal... then I wonder if raw corn chowder is healthy for digesting as is... I had some grains from a friend which I used for a year or so that were very...earthy and tart. The only way I could drink it was in a very highly flavored smoothie. The ones I grow now are SO very mild...almost like a milk buttermilk. Deelightful! So if you find that you can't adjust to the taste of what you have, you could always try another source.
