Water kefir also has the same good probiotics as milk kefir. I have done milk

kefir in the past, but found I was consuming too much dairy, as I continued to

eat both cheese and yogurt. I still eat my homemade yogurt - because I really

like it - but I have somewhat cut down on cheese. With water kefir, you are

obviously not getting more dairy. I can't get raw milk here without both a

commitment in travel time and money. My consumption of too much dairy meant I

was displacing more leafy greens and whole grains in my diet.

Water kefir seems to taste a bit alcoholic-ish to me but I doubt there's much

alcohol to it. I've never seen a nutritional breakdown of water kefir. I also

find water kefir to very refreshing in the summer heat.

I use one-third cup regular ol' white sugar and 1-2 tsp blackstrap molasses to

one quart water. I also add a lemon slice (peeled if not organic)
