Mine took 2 months but I had no idea what I was doing and couldn’t seem to get any answers. Mine would go from watery to full separation without setting up properly. It was very frustrating! But they just needed time. You could try using a lot less milk until they start behaving the way you expect. Put them in a jar, add enough milk to cover, and see how that works in 24 hours. Last night was 24 hours and the milk is still thin and yeasty smelling. Same thing this morning. Any idea on when the little buggers are going to wake up? When I swirled the milk last night there was a slight ripple beneith the surface so I gave some gentle stirring in case they needed to be separated.
