I've never had water kefir and the main reason is I don't consume sugar or

alcohol. What is the sugar and alcohol content of water kefir after it's done

fermenting? How little sugar can be used? What types of sugars can be used?

Powered lactose? Sugar alcohols like xylitol? Fruit juices? Which? Starch? How

little alcohol can be produced and still call it water kefir? I like the idea of

carbonation. Is it directly related to the sugar and or alcohol content? Does

raising one lower the other?
