Water kefir and body PH

Hello,

I've searched the archives but can't come up with a definitive answer to my

question. Though I'm not fanatical about such things I do like to consciously

eat foods with an eye to the ph balance of my body. And I would like to know if

water kefir is thought to be acidifying or alkalizing. I'm aware that the

finished kefir is acidic but I wonder if, like very acidic lemon, once the

digestive tract burns it to ash the ash, like the ash of lemon, is alkaline.

I think as a rule of measurement in the acid/alkaline aspect, anything sour

turns to alkaline ash, and anything sweet or carb heavy turns to acid.

Going by that principle ( I am not a scientist, but this just seems practical

reasoning to me), I would think that kefir would be slightly alkaline, since the

list I follow says that milk and other dairy products are generally neutral in

establishing Ph balance. though it did not include a list of fermented foods.

I don't know if fermenting changes other important factors in such foods that

would change the ph level; I just know that my body responds as if kefir is like

any other sour food on the list.
