Kim, if you find the water bath too much trouble, you might consider reducing

the volume of your grains per jar.  I use only about 1 teaspoon to make 12 oz of

kefir each day - all that I want.  When my grains grow past the tsp, they finish

faster, so I just put some in the freezer, share them with others, or put them

in my smoothie.  Works for me - maybe for you, too!
