thank you for respond. i am just changing the milk every 24 hours. they are in

glass jar covered with cloth and rubber band around. ''when i take after 24

hours it seems like little thick. i am straining with plastic strainer. but not

washing. just straining. after jar is empty i put grains back to the jar and

cover it again. 

do i do wrong?

That sounds interesting, but it is different from kefir. I’ve never tasted

ayran, but it seems that most of the fermented milk products around the globe

are fairly similar in flavor, because they are primarily fermented with

lacto-bacteria. Yogurt is similar to kefir but different. Kefir has

lacto-bacteria and also beneficial yeasts, so it has a slightly more complex

flavor when compared to yogurt or drinks made with yogurt. Yogurt is thicker

than kefir, so mixing the yogurt with cold water would thin it to a consistency

more like that of kefir.

Tell us how you make your kefir and the group can tell you if you’re doing it

right. But if it tastes similar to yogurt, then you’re probably doing it

right.
